UrMajestySire’s Food Experiments: Mangoes and Cream with Lengua de Gato plus three bonus recipe variations

A few weeks ago while visiting our Tita, she handed me these big ripe mangoes and told me to do ‘something’ out of it. Challenge accepted!
Here’s what I came up with, a basic, healthier version of a cross between a no-bake crumble pie and and mango ice cream. There are also additional recipes included if you want to make this it into a no-bake pie or fridge cake, a homemade ice cream or a version of ‘Mango Bravo’ from a popular artisan bakery *winks* hehe!
INGREDIENTS
3 to 4 big ripe mangoes, cubed
1 pack/cup all-purpose cream or heavy cream, chilled
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
1 zest of a lemon
2 tbsp brown sugar, optional (I didn’t put sugar though, the sweetness of the mangoes and vanilla is enough)
1/2 cup lengua de gato or graham crackers, crushed (will post my lengua de gato link here)

UrMajestySire’s Food Experiments: Veggie Balls

INGREDIENTS
Vegetable mix:
1 white onion, minced
2 carrots, minced
2 celery stalks, minced
2 garlic cloves, minced
salt & pepper
1 can button mushrooms, drained and minced or 2 eggplants, minced
Binder:
3 eggs
1/2 cup bread crumbs
fresh parsley, minced

UrMajestySire’s Food Experiments: Galunggong dredged in herbs and spices

Though ‘Bangus’ or ‘Milkfish’ is the national fish, ‘Galunggong’ or ‘GG’ is dubbed as the ‘Pambansang Isda’ because of its very affordable, readily available and easy to cook.
For a different take on GG, my sister and I tried to veer away from the usual frying or coating. Since there’s a recent wide awareness of the healthy benefits of herbs and spices, here’s what we came up with.
GALUNGGONG WITH SPICES AND HERBS
Ingredients:
1 kilo Galunggong, cleaned of innards and washed well
1 tbsp Turmeric
1/2 tbsp Paprika
1/2 tbsp Cayenne
Salt & Pepper
1 tbsp Cornstarch
1/2 cup flour, for dredging
Egg, beaten (optional)
Bird’s Eye Chili or ‘Siling Labuyo’ (optional)
Oil, for frying

Summer Vacation: Manners and Common Sense for Pinoys
Mula sa isang pag-uusap kamakailan lamang dahil hindi na ‘common’ ang common sense at manners, my goodness!
Malapit na ang Holy Week/Summer Vacation, time para sa pamilya, pahinga at pagninilay-nilay. Kung may balak, ngayon pa lang dapat nakaplano na ang maaaring gagawin at dapat sana’y (ay dapat pala walang sana) nakaipon na ng budget. Dagdag paalala lang:
1) Kung magbabakasyon sa mga kamag-anak o malalapit na kaibigan, dapat magtanong muna at magpapaalam in advance ng pagbisita (kailan at gaano katagal) at hindi yung ipinapa-alam lang o darating ng bigla dahil malamang may plano din sila diba? The world does not revolve around you chos!
2) Huwag gawing ‘package counter’ na iwanan ng mga anak ang mga kamag-anak o kaibigan dahil responsibilidad po ninyo yun like forever na noh! Tapos magpopost na nag-outing kasama ang officemates o barkada, kahiya naman diba!
3) Tumulong sa gawaing bahay kahit may mga kasambahay at hindi yung tanghali nang gigising – kung nais ‘yan aber sa hotel magstay.
4) Magpasalamat sa pagkaing inihanda at hindi ito dapat pinaghihintay kapag nakahain. Grasya ‘yan at di napupulot – kung ayaw ng nakahain, sa resto kumain.
5) Huwag makalat, maaksaya, maingay, etc. – kung ayaw umayos, umuwi na lang at duon magkalat, mag-aksaya at mag-ingay.
6) Tungkol sa budget naman, dapat may naipon dahil walang libre sa mundo. Maski estudyate ay nakakaipon (dapat) tuwing pasukan at lalo na kung ikaw ay may trabaho na. At hephephep! ‘Wag nang balaking mangutang dahil tulad din ‘yan ng birthdays, anniversaries, graduation, fiesta, etc. alam mong magaganap ito kaya’t dapat nag-iipon ka.
7) Magbigay respeto sa mga makakasama. Isaisip na ang panahong ito ay para sa pagpapahinga, pagninilay-nilay at ika nga ay ‘quality time’ with loved ones. Kung nais nilang magpahinga, huwag nang maging mapaghanap at naising mamasyal ng malayo. Kung nais nilang magsimba, samahan sila. Kung ‘bored’ sa tinutuluyan, pwes, ikaw ang lumabas mag-isa.
O ayan, may ibang basics pa na wala dito pero siguro naman alam na natin at dapat ipractice araw-araw.
