UrMajestySire’s Food Experiments: Mangoes and Cream with Lengua de Gato plus three bonus recipe variations

A few weeks ago while visiting our Tita, she handed me these big ripe mangoes and told me to do ‘something’ out of it. Challenge accepted!

Here’s what I came up with, a basic, healthier version of a cross between a no-bake crumble pie and and mango ice cream. There are also additional recipes included if you want to make this it into a no-bake pie or fridge cake, a homemade ice cream or a version of ‘Mango Bravo’ from a popular artisan bakery *winks* hehe!

INGREDIENTS

3 to 4 big ripe mangoes, cubed

1 pack/cup all-purpose cream or heavy cream, chilled

1 tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp nutmeg

1 zest of a lemon

2 tbsp brown sugar,  optional (I didn’t put sugar though, the sweetness of the mangoes and vanilla is enough)

1/2 cup lengua de gato or graham crackers, crushed (will post my lengua de gato link here)

PROCEDURE:

  • While doing the cream part, place the diced mangoes in the fridge
  • In a bowl, whisk the cream until it has soft peaks (you may also use a mixer)
  • Add in the vanilla extract, cinnamon and nutmeg, gently folding it in so as not to lose the air from the cream
  • Mix in the chilled mangoes until completely covered
  • Pour mixture in a bowl or mold
  • Top with some crushed lengua de gato or graham crackers and lemon zest and cover with plastic wrap
  • Place in the fridge for at least 1 hour before serving

IF YOU WANT TO MAKE THIS AS A NO-BAKE PIE:

  • Press graham cracker crust (mix crushed 1 cup graham crackers, 1/2 slab of butter or margarine, 1/2 cup sugar and 1 tsp cinnamon) in a 9×13 inch pie mold or tray
  • Place the pie crust in the fridge for at least 1 hour
  • Add in the mangoes and cream mix topped with crushed lengua de gato and lemon zest and place in the fridge for at lease one hour before serving

IF YOU WANT TO MAKE THIS AS A HOMEMADE ICE CREAM:

  • In a bowl, add 2 cups of milk, 1/2 cup sugar and 8 egg yolks (optional, but this adds more creaminess) to the cream mix and whisk until it has soft peaks (you may also use a mixer)
  • Add in the mangoes and top with crushed lengua de gato or graham crackers and lemon zest and cover with plastic wrap
  • Place in the freezer for at least 1 hour before serving

IF YOU WANT TO MAKE THIS AS A ‘MANGO BRAVO’ VERSION:

  • Fold crushed meringue and slivers or thinly sliced almonds, walnuts or any nut of your choice to the cream mixture and mangoes
  • Place in a round cake mold and cover with plastic wrap
  • Top with crushed lengua de gato or graham crackers and lemon zest and cover with plastic wrap
  • Place in the fridge for at least 1 hour before serving
  • TO SERVE: Take it out of the mold and into a serving plate
  • Pour some chocolate syrup on top (optional)
  • Top with more slivers or thinly sliced almonds, walnuts or any nut of your choice

And there you go, the basic of Mangoes and Cream with 3 recipe variations as bonus!
