INGREDIENTS
Vegetable mix:
1 white onion, minced
2 carrots, minced
2 celery stalks, minced
2 garlic cloves, minced
salt & pepper
1 can button mushrooms, drained and minced or 2 eggplants, minced

Binder:
3 eggs
1/2 cup bread crumbs
fresh parsley, minced

PROCEDURE
– In a heated pan with oil, saute the onions, garlic, carrots, celery, mushrooms and/or eggplants until veggies are tender

– Remove from heat and set aside to cool

– In a bowl, mix the eggs, bread crumbs and parsley

– Add the cooked veggies to the binder mix thoroughly

– Place in the fridge for 20 to 30 minutes

– Roll the mixture firmly into balls

HOW TO COOK THIS:
– In a heated pan with enough oil, fry the veggie balls until golden brown; place in a plate lined with paper towl to absorb excess oil

– Preheat oven to 350Β°F and line a baking dish with oil; place balls at least 1/2 inch apart and roast for 20 to 30 minutes; allow veggie balls to rest before serving
