SARAP DIVA Recipes: Vanilla Ice Cream with Salted Caramel Syrup and Calamansi con Nata
Ingredients:
vanilla ice cream
bottled calamansi con nata (Laguna delicacy)
butter
salt
1/2 cup sugar
1/2 cup cream
water
brandy (optional)

Procedure:
– In a sauce pan, whisk to caramelize the sugar or until sugar dissolves and turns brown
– Add in the butter – Add in cream
– Add calamansi con nata syrup, about 2tbsps
– Add a pinch of salt
– Add in some water (and brandy if preferred)
– Whisk until well incorporated then turn off heat and let cool
– You may use it as is or preserve it in a bottle or plastic container and keep it in the fridge

To Serve:
– In a glass, place scoops of vanilla ice cream
– Drizzle the ice cream with the syrup
– Top with a piece or two of the calamansi con nata
