Spanish Sardines Pasta
Ingredients:
spaghetti pasta
olive oil
butter
1 onion, minced
1 clove of garlic, minced
tomatoes, sliced
1 bottle of Spanish-style sardines
pitted black olives, rough chopped
capers, drained
parmesan cheese, grated
juice of 1 lemon
a sprig of parsley, rough chopped

Procedure:
– Cook the pasta according to package instructions and set aside

– Drain the Spanish-style sardines but keep the liquid. Slice lengthwise and remove the bones. Rough chop and set aside

– In a pan, heat the olive oil and saute the onions, garlic and tomatoes

– Add in the olives, capers and sardines

– Add the liquid from the sardines

– Add in the cooked pasta, butter and grated parmesan; mix well

Cooking Tips:

– Adding butter adds more flavor and silkiness to any pasta dish

– If you want more zing, add in cayenne, paprika or chili flakes

– Take out the fish bones so that there is nothing hard to chew

– Sprinkling some lemon juice and topping up sprigs of parsley adds a fresh zesty taste and smell to the pasta

– You may also use the sliced and pitted black olives
