Creme De Cacao: Chimara Feel Good Kitchen’s chocolate cake is a must-try!

The food adventure at Chimara Feel Good Kitchen was tasty and filling so the ‘leave room for dessert’Β part became a to-go. They have Cranberry Oat Cookies then but opted for Creme de Cacao for reasons of comparison with other chocolate fares in the metro (nah, because its chocolate hehe!)

Asking about the cacao they use, they said its organic but of course not sugar-free because it would alter the taste. Coffee or tea would be nice to go with any dessert so I also suggested it and they said its in the works. That being said, went home with a big smile and a full (of healthy food) tummy.

Come coffee/tea time the next day (3pm, I know very Titas of Manila hehe!), had water boiling and brought out the Creme de Cacao. First bite and hands down its so delicious!Β I stand corrected, it can stand on its own sans coffee or tea.

You can taste its rich goodness without any cacao after taste or grainy texture. The ‘frosting’ I swear they should also make chocolate bars of it and the cake part is moist, fluffy and you can also taste the cacao goodness. I highly recommend it not just for chocolate lovers, chocoholics, and sweet tooth’s but for those who are looking for a healthier alternative. A few weeks ago while visiting our Tita, she handed me these big ripe mangoes and told me to do ‘something’ out of it. Challenge accepted!

Here’s what I came up with, a basic, healthier version of a cross between a no-bake crumble pie and and mango ice cream. There are also additional recipes included if you want to make this it into a no-bake pie or fridge cake, a homemade ice cream or a version of ‘Mango Bravo’ from a popular artisan bakery *winks* hehe!

INGREDIENTS

3 to 4 big ripe mangoes, cubed

1 pack/cup all-purpose cream or heavy cream, chilled

1 tsp vanilla extract

1/2 tsp cinnamon

1/2 tsp nutmeg

1 zest of a lemon

2 tbsp brown sugar, Β optional (I didn’t put sugar though, the sweetness of the mangoes and vanilla is enough)

1/2 cup lengua de gato or graham crackers, crushed (will post my lengua de gato link here)

UrMajestySire’s Food Experiments: Indoor S’mores

Another late post here. Made my version of S’mores for NYE dinner. Sweet & sticky desserts for harmonious family relations. This is an easier version, you know minus the sticks and campfire. You can stock up on the ingredients and just whip it up when you feel like having some chocolate-y and gooey treat!

URMAJESTYSIRE’S RECIPES: Buko Pandan recipe

BUKO PANDAN
INGREDIENTS:
2-3 cups shredded coconut meat, drained
1 pack all-purpose cream
1 can condensed milk
1 pack pandan flavored gulaman, cubed
*Tip: Use the coconut water in forming the gulaman for added flavor

You may also add:
1 jar nata de coco or kaong
1 cup sago

Substitutes:
– 1 can green gulaman jelly, cubed

– 1 tsp. pandan essence

PROCEDURE:
– In a large bowl, mix all ingredients

– Chill in the fridge for at least one hour before serving

REMILLY’S YEMA CAKE: Caramel milky goodness and more

Different versions of caramel cake, yema cake and pastillas cake abound in the Metro. An all-time favorite version is from a cake shop located in Timog. That was until I tasted Remilly’s Yema Cake!

Chanced upon their addictive cakes after canvassing interior decors and decided to try single serving versions of their Caramel and Yema-Pastillas cakes (they have other variants like ube, mocha, etc.)

Long story short, the cakes were so delicious and its not ‘nakakaumay’ or too sweet! The caramel has generous milky sauce and does not have that ‘burned milk’ taste, topped with chocolate shavings. The yema-pastillas is not too sweet and has generous milky sauce and topped with cheese shavings.

The best part, each single version is less than Php100! They also have rolls (whole & half) and full cake versions too!

Aside from cakes and rolls they also offer custom-made cakes, cupcakes and other pastries.
